Curried Lamb Rye Sandwich

Juggling job, studies and managing a home full time means getting as creative as possible in the kitchen. Usually weekday cooking is rusting up meals rather than cooking recipes from that secret cookbook hidden in come corner of the kitchen cabinet. Leftover Lamb curry and chicken curry or even potato and cauliflower curry can be used to make these sandwiches.
Before I go ahead with the recipe, I would like to tell you all why I chose this. This sandwich is inspired by a line Ross, from Friends uses. He lunch goes missing for few days and he gets very mad and apparently starts bullying his colleagues.
He is summoned by his HOD and Ross tells his boss, 'that sandwich is special. My sister makes it by putting a slice of bread soaked in gravy. That makes my turkey sandwich moist and tasty.'
That moist and gravy gave me an idea to make this sandwich.
All you will need is some leftover lamb/chicken curry, rye or any other healthy bread you would like to use for sandwich, Mayonnaise, lettuce, tomatoes and onion.

I took three slices of rye bread, spread a teaspoonful of the curry/gravy, on the other slice added the lamb pieces (ensure it is boneless). Now cover this slice with the one you spread the gravy on, top that slice with lettuce, tomatoes and onion pieces and spread mayonnaise on the third slice and place it on top.

 Grill and serve it with soup or a side salad/potato chips...I added a side of tabouleh and salt and pepper tomatoes.
