Potato, sweet and reliable

                                         I usually have boiled potatoes handy in my refrigerator
                                         The mornings when I am in a rush, this dish is easy and
                                         goes very well with chapatis or even between slices of
                                         toasted, multigrained breads. Yes, a potato curry sand
                                         -wich                                 




                                         Heat about 1 tbsp of vegetable oil and add cumin seeds
                                         fry coarsely chopped onions and tomatoes and add
                                         1 tsp garlic powder, and salt to taste. After this mix is
                                        fried golden brown, add the boiled and chopped
                                        potatoes. Add slivers or chopped green chillies.
                                        Cook on low flame for about 10 minutes.                                

                                          This is how the curry turns out after 10 minutes,
                                          add a dash of aamchur (mango powder) if you like
                                          to have a tangy flavor. I did that at the end and cooked
                                          for another 5 minutes.
                                         Ready to be served after garnishing with some fresh
                                         coriander leaves.
