Working mom means less time and more things to do. I always look for simple recipes. I learnt to cooking through trial and error methods. The easiest way, I figured out was to work with simple spices and those spices that I like. I love cumin, garlic, ginger, green chillis and I started using these sparingly at first and then started adding cinnamon. Gradually I reached a level where I can confidently use star anise, poppy seeds, black cardamom, bay leaves, etc.
I have tried to make my blog as easy to follow as possible. I am not very fond of the ingredient list that appears at the bottom of most recipes. I find it overwhelming. Therefore I decided to put pictures of spices I have used.
Method:
Heat oil in a heavy bottomed pan and add fry the whole spices (star anise, pepper corns, cinnamon sticks, cardamom, cloves). add the chopped onion pieces, ginger, garlic and the green chillis. Fry all this till it turns golden brown and add the meat pieces mixed in turmeric, spice powder. after frying the the meat for about 8 minutes, add 1 chopped tomato and cook till tender. add salt suiting you taste. Add half a cup of water and pressure cook for about 7 minutes. Open the cooker (after the steam settles down) add baby potatos in their jacket. cook till the potatos are cooked.
I chose not to pressure cook the potatos with the meat because they are baby potatos. Even after the meat is cooked, these potatos get cooked on slow flame very easily. I usually cook my meat curries on a slow flame after pressure cooking it. reason being, when curry is cooked on simmer, flavors get released or else curries get that boiled pressure cooked smell.
Mutton curry with baby potatos, ready to be served.
I would have loved to garnish it with either fresh curry leaves or coriander leaves. But I forgot to add it to my shopping list. I guess this curry will survive without that extra frill...
