Stuffed Baby Eggplants
Whole baby eggplants. Make four slits
2 onions, a small piece of ginger and 7 flakes of garlic paste
Roasted peanut powder, tsp chilli powder, pinch of asafoetida,
salt and tsp of garam masala
Stuff the eggplants with the onion paste and the peanut powder mix
Heat oil in a pan and shallow fry the stuffed eggplants for about 5 mins on
medium flame, add the balance onion and peanut mix with 4 tbsp of water
cook for about 6 mins on simmer.
Once done, garnish with fresh coriander and serve it with chapatis, or
with and yellow dal.

2 medium sized onions
baby eggplants
1 cup of roasted peanuts
small piece of ginger
7 garlic flakes
4 tbsp vegetable oil
1 tsp chilli powder
tsp of garam masala
pinch of asafoetida
salt to taste
fresh coriander
If you make your preps including onion paste and peanut powder mix the previous day, this dish takes about
20 minutes including the cooking time.
